Redefining Caribbean Cuisine – Chef Anthony Mair And Taymer Mason

A Taste of the Caribbean, an annual Montreal festival of Caribbean culture celebrating its 15th anniversary in 2014.

The festival raises money for its Triumph Through Adversity Culinary Scholarship Program; a portion of the proceeds raised through this month’s workshops will go to the program.

A Taste Of The Caribbean Festival will be presenting two cooking on December workshops on redefining Caribbean cuisine, to be given this month by two veteran chefs and cooking instructors in Montreal.

Jamaican-born chef, caterer and restaurateur Anthony Mair, who lives in Toronto and Jamaica, will give a workshop on Caribbean fusion cuisine. His menu will feature dumplings filled with a curried pumpkin mash and topped with a coconut crème fraîche and caramelized Scotch bonnet onions; a rib sampler with Blue Mountain coffee-laced barbecued ribs and guava jerk ribs; avocado crème brûlée. It will take place December 12th at 6 p.m. and again December 14th at 2 p.m.

Barbados-born vegan chef Taymer Mason, a food biologist and caterer who makes her home on the island of Saint Martin, will give a workshop on creating vegan traditions with Caribbean-style cuisine. On her menu are breadfruit ravioli with calabaza squash filling; seitan roast with Bajan-style holiday stuffing and sorrel chutney; vegan holiday ham with pineapple glaze and, for dessert, guava, apple crostata with rum-butter sauce. It will take place December 13th at 6 p.m. and be repeated December 14th at 11 a.m.

The workshops will be given at Les Cuisines Commerciales Mont-Royal, 5475 Royalmount Ave., Suite 119-120, Town of Mount Royal.

Each workshop will feature a two-hour interactive demonstration in English (Mason speaks French as well), followed by generous tastings of the dishes being prepared. Cost per workshop is $60 per person, which includes printed recipes. Mair’s signature sauces will be available for purchase at his workshop; Mason will have signed copies of her book, Caribbean Vegan, available for sale.
